1/2 cup sour cream
juice of 1/2 lemon
1 tablespoons Balsamic vinegar
1 tablespoon olive oil
salt and pepper
1 pound shrimp, cooked and peeled
3 stalks of celery, diced. I use the heart with the leaves.
3 green onions, diced
1 mango. cut into bite sized pieces
1 cup snap peas, thinly sliced
1/2 cup fresh basil or 1 teaspoon dried.
leaf lettuce that we will wrap your shrimp in.
1. Mix together sour cream, lemon juice, Balsamic vinegar, olive oil, salt and pepper. This will be your dressing.
2. Toss together your shrimp, celery, green onions, mango, snap peas and basil.
3. Gently fold everything together, you can let this set far a few hours in the refrigerator or serve it immediately.
4. Spoon mixture into lettuce leafs, wrap or fold over and enjoy.
