Southwestern Shrimp Salad, 6/10/14

Vanessa BarrancoWhole Foods 1 C cucumber - diced2 C cherry tomatoes - halved1 avocado - cubed1 c corn fresh or frozen1 T cilantro - chopped 1/2 c purple onion - diced1/2 lb cooked shrimp deveined and tails removed1/2 c tomato juice2 t Louisiana hot sauce1 t cumin1 T chili powder1/2 c olive oilSalt & pepper to taste Adjust seasons and serve with tortilla or corn chips and lime wedges. Ole!!!
