      Stuffed Shrimp, 2/13/14

      STUFFING

      • 2 tbsp celery, diced
      • 2 tbsp onion, diced
      • 4 tbsp butter
      • 1 cup bread crumbs
      • 2 cup chopped spinach
      • 1/2 cup crab meat
      • 1/4 cup Parmesan cheese

      OTHER INGREDIENTS

      • 1 lb large shrimp, butterflied
      • 1/4 cup white wine
      • 1 tbsp butter
      • Salt & pepper
      • Lemon slices

      PREPARATION

      1. In a skillet sauté the onion, celery and spinach until just tender - approx. 2 minutes
      2. In mixing bowl combine all other ingredients and mix thoroughly
      3. Make balls out of stuffing and fold into butterflied shrimp
      4. Place in pie pan with wine, lemon, and butter
      5. Poach in 400 oven, approx. 10 minutes
