      Ingredients

      • 3 tablespoons Olive Oil
      • 1/2 cup red onion, finely chopped
      • 2 tsp minced garlic
      • 1 1/2 cups fresh baby lima beans
      • 3 cups sweet corn
      • 1 small jar pimentos
      • Salt and freshly milled pepper

      {}Garnish

      • 1/4 cup fresh parsley, chopped
      • 1 tsp Paprika

      In a large skillet, heat oilover medium-low heat. Add the chopped onion and minced garlic. Saut for 5minutes. Add the rest of the ingredients.{} Salt and pepper, to taste.Cover and simmer on low heat for 15 to 20 minutes. Garnish with the parsley andpaprika.
