Sundried tomatoes & spinach stuffed chicken

4 boneless and skinless chicken breast, slit to open for the stuffing

1/2 cup or more of sun dried tomatoes

4 sliced mozzarella cheese

handful of fresh spinach

2 teaspoons olive oil

Dressing:

1 tablespoon Dijon mustard

1 tablespoon white wine vinegar or lemon juice

1/2 teaspoon sugar

2 teaspoons olive oil

1/2 teaspoon each of Italian seasoning(basil, oregano, and thyme).

salt and pepper

1. Mix together all the dressing ingredients and coat the chicken with it (inside and out).

2. Stuff the chicken with the sundried tomatoes, mozzarella cheese and spinach, secure with a toothpick.

3. In an oven proof skillet, brown the stuffed chicken breast in 2 teaspoons olive oil.

4 Place the skillet in a 350 degree oven and cook for an additional 15 minutes or till desired doneness.

5. Let set for 2 minutes and drizzle with juice form the pan.
