Sweet vegetarian burritos

  • 4 cups sweet potatoes, cooked & mashed
  • 6 cups kidney beans, drained
  • 8 ounces cheddar cheese, shredded
  • 3 tablespoons soy sauce
  • pinch cayenne pepper
  • 2 teaspoons cumin
  • 12 10" flour tortillas, warmed up
  • 4 teaspoons mustard
  • 3 tablespoons chili powder
  • 2 cups water
  • 4 cloves garlic, minced
  • 1 yellow onion, chopped fine
  • 1 tablespoon vegetable oil
  • Directions

Preheat oven to 350F

Heat oil in a medium skillet and saute onion and garlic until soft

Mash beans into the onion mixture

Gradually stir in water; heat until warm, about 3 minutes

Remove from heat and stir in soy sauce, chili powder, prepared mustard, cumin, and cayenne pepper

Divide bean mixture and cooked and warm sweet potatoes evenly between the tortillas

Top with cheese

Fold tortillas up burrito-style around the fillings and place on a baking sheet

bake in preheated oven (350F) until warm; about 12 minutes
