Wahoo on Arkansas rice with citrus

1 6oz steak of Wahoo or other meaty fish

1/2 cup jasmine rice

1 orange segmented

1 grapefruit segmented

1/4 cup sliced strawberries

juice of one lemon

1 tbbpsn honey

very good olive oil

Coat the Wahoo with olive oil then season with salt and pepper. Heat a large skillet very hot then sear the fish on both sides and then finish in a 400 degree oven aprox 4-5 min. In a separate skillet gently heat all the fruit and honey and lemon juice. Serve the fish atop the rice then finish with the warmed fruit.
