Wild Mushroom Flatbread, 1/10/14

3 oz pizza dough, or a prepared pre baked dough from store

3/4 oz sautéed mushrooms

1/2 oz olive oil

1 T parsley chopped

3 T mozzarella cheese shredded

1/2 T oregano

1/4 cup julienned red onion

1/8 tsp black pepper

1 T pumpkin seed & basil pesto

Prepare flatbread dough according to recipe and reserve tobuild flatbread.

Stretch dough to a nice size rectangle. Place onto sheet panor pizza peel. Spread olive oil evenly over dough, sprinkle with oregano andblack pepper. Build the flatbread with the mushrooms, cheese and red onions.Place into a 425 degree oven and cook until the bottom is crispy and the top isgolden brown. Remove from the oven and cut into desired serving sizes. Drizzletop of pizza with pesto. Serve warm.
