Maranda Davis shares recipe for vegan tacos

LITTLE ROCK, Ark. (KATV) —
Maranda Davis, Vegan IFBB Pro and Holistic Fitness & Nutrition Specialist was on Good Afternoon Arkansas on Tuesday sharing a recipe for vegan tacos. She has a cookbook coming out in April 2019 called “Make It Vegan."
Recipe:
10 Taco Shells
10 Soft Tacos
Filling
14 ounce firm tofu
1 tbsp olive oil
1/2 yellow onion, chopped
1 package of taco seasoning
Toppings:
These are all optional! Choose your favorites to top your tacos or your taco salad salad!
Avocado
Tomatoes
Black beans
Guacamole
Arugula
Shredded Cheese
Vegan Sour Cream
Onion
Salsa
Taco Sauce
1. Bake shells according to package instructions.
2. Place oil into skillet on medium heat and add onions. Cook until onions are are translucent.
3. While onions are cooking, drain tofu and wrap with paper towels to remove excess moisture. Remove tofu from paper towels and crumble it into the skillet with the onions. Pour in taco seasoning. Cook over medium heat for 15 minutes or until moisture has been removed from tofu. Stir often to prevent any scorching.
Remove from heat and build your favorite taco or taco salad.
