French Onion Chicken

2 cups white onions, sliced
4 boneless and skinless chicken breast or thighs
2 cups beef broth
1 cup Swiss cheese
4 tablespoons olive oil, divided
2 tablespoons flour
2 teaspoons balsamic vinegar
1 teaspoon Italian Seasoning
salt and pepper to taste
4 slices of French bread, toasted
1. In a skillet heat 2 tablespoons olive oil and sauté the onion till soft. Remove from skillet.
2. In same skillet heat the 2 remaining tablespoons of olive oil and season the chicken with salt and pepper and saute till done. Remove from skillet.
3.In the same skillet add the 2 cup of chicken broth, heat to a boil and whisk in the flour and Italian seasoning and salt a pepper to taste.
4. Bring the beef broth to a boil and add the sautéed onion back in, stir and add the chicken into mixture and top with Swiss cheese, cover to melt the cheese.
5 Serve on toasted French bread.
