Leftover potato hash

This recipe is designed to utilize leftover just about anything.

2 grated peeled potatoes

1/2 cup diced onion

1/4 cup diced celery

2 eggs

S&P

1 tbspn olive oil

1/2 cup sour cream

Peel and grate the potatoes and put them in a large bowl. Saute the onion and celery then add to the potatoes. Dice whatever leftovers and add them to the potatoes as well. Add the eggs and S&P and mix well. Heat a cast iron skillet and carefully turn out the potato mixture into the skillet and cook in a 425 degree oven for 20-25 min. Let the skillet cool slightly and cut into slices and serve with sour cream.
