Alley Oops1 box Jiffy cornbread mix1 egg2/3 cup milk1 pound ground beef1 pepper, bell or your favorite pepper, diced1/2 onion, diced1 cup salsasalt, cayenne and Italian seasoning to taste1 cup corn1 cup cheese, grated1, Mix the Jiffy according to directions on the box and set aside.2. In a skillet, brown the ground beef with the pepper and onion, drain and add the salsa and seasonings. Cook for a few minutes till hot.3. In a small, greased casserole dish, spread half the Jiffy on the bottom of the dish. Layer the cheese, corn and ground beef. Top with the remaining Jiffy.4. Bake at 350 for about 45 minutes to an hour or until brown. 5. You can garnish this dish with sour cream, avocados or salad.
