Salmon with Shrimp & Crab Stuffing, 2/26/14

4 salmon fillets, boneless and skinless, cut a hole in the center of fillet to make a pouch to stuff.

1 can crab meat, drained

1 cup shrimp, tail and shells removed, if they are big shrimp, you might want to cut into smaller pieces.

3 ounces cream cheese

1 cup grated cheddar cheese

1/4 cup parmesan cheese

2 strips bacon, cooked and diced

2 green onions, diced

salt, pepper and garlic to taste, I like a little Cajun seasoning in mine.

1/2 cup white wine

1. Arrange salmon on a none stick baking dish or sprayed baking dish.

2. Mix together all the other ingredients, except the wine and stuff into salmon.

3. Pour wine in bottom of cooking dish and bake, uncovered, for 25 minutes at 350 degrees or until fish is flakes.
